Beets are rich in a unique form of potassium known as potassium nitrate. This is converted by the body to nitric oxide and helps dilate blood vessels. Beets also offer a unique type of fiber known as beta-D-glucan that binds onto bile acids and prevents their absorption in the lower GI. This binding action with bile acid and the subsequent removal of bile is a primary method of reducing toxins.
