Coconut is rich in fiber and beneficial fats known collectively as medium chain triglycerides. The fiber helps provide the GI with important bulk and water holding properties. The medium chain triglycerides are easily absorbed and used readily by the body as a unique source of energy. Approximately 70% of the fat in coconut is medium chain triglycerides. Coconut also contains lauric acid which helps support a healthy microbiome.
